In a joint effort to promote the regional cuisine of Eunice, LA, the Jean Lafitte National Park Prairie Acadian Culture Center hosts a celebrity guest chef series, once a month, alongside Louisiana Kitchen & Culture magazine. The first of the series featured Chef Dustie Latiolais, Executive Chef of Crawfish Town USA.
In celebration of the 31st Annual World Championship Crawfish Étouffée Cook-Off, Chef Dustie prepared his Old Fashioned Crawfish Étouffée. Several variations of this popular dish can be found throughout the state. Some cooks are adding roux and others are adding a little tomato base, but Chef wanted to share an authentic recipe that stays true to the roots of our Cajun ancestry.

Visit the city of Eunice, the last Sunday of March, for the World Championship Crawfish Étouffée Cook-Off. Sample dishes from both professional and amateur chefs, and decide for yourself who's takes home the title. Every fourth weekend in April, taste a wide variety of étouffées such as crawfish, seafood, and even wild game at the Arnaudville Étouffée Festival.
