For over 30 years, Ruby’s Café has kept locals coming back for more in downtown Eunice, Louisiana. By now, locals know the lunch menu by heart and there’s a reason why it hasn’t changed in the last three decades – because the recipes are tried and true. Every Monday, baked chicken is served. Tuesdays, the restaurant fries up thick, juicy pork chops. Wednesday, they prepare a Louisiana specialty called Cajun smoked ponce. Thursday is pork ribs, and Friday, they serve their famous crawfish étouffée over fried eggplant.
